The offset is the whole point

In peyote and brick stitch, beads in one row nest into the gaps of the row below rather than stacking directly on top. A chart drawn on a plain rectangular grid misrepresents that, and the error compounds across the width of the piece rather than staying local. Straight rows and columns are for loom work, where the warp threads hold each bead directly above the last.

Odd count and even count behave differently

Even-count peyote turns at the end of each row cleanly. Odd-count needs a special turn at one edge on every other row, which is fiddly and is the reason many patterns specify even count even when the design would prefer odd. Decide which you are working before you chart, because the edge column behaves differently and a design centered for one will sit off-center in the other.

Bead size and metric charting

Seed bead sizes are given in the aught system, where a larger number means a smaller bead, and the physical sizes are quoted in millimeters everywhere in the world. An 11/0 round seed bead is roughly 2 mm across. That makes A4 and metric spacing a natural fit for beadwork even in the US, and it is why the bead papers here stay in millimeters while the knitting and cross stitch pages offer inches.

Printing it accurately

This only measures correctly if your printer doesn't rescale the page. In the print dialog set Scale: 100%, not "Fit to page" or "Shrink oversized pages". If you're not sure it worked, print the calibration page, measure the ruler on it with a real ruler, and it will tell you exactly what your printer is doing to the page.
